When I was growing up, we would travel to Toronto for a summer vacation during the Canadian National Exhibition. One of the fair vendors served these warm cinnamon sugar doughnut holes that we all loved and would wait for every summer that we went. They were so good that years later they still come up every once in a while. These cinnamon sugar doughnuts are probably the closest thing to those doughnut holes that I've tasted. Warm fried dough coated in a cinnamon sugar mix...delicious. And they're really only semi-homemade, so they are easy to make!
Ingredients:
1 can refrigerated biscuit dough
Vegetable or canola oil
3/4 cup sugar
2 teaspoons ground cinnamon
Directions:
Pour oil into a large saucepan or dutch oven. You need about 1 1/2 inches of oil in the pan. Heat over medium heat to 350 degrees.
Mix sugar and cinnamon in a bowl.
Remove biscuits from their can. Using a 1/2 inch biscuit cutter (or a bottle top), cut a hole from each biscuit.
Using two chopsticks or the handles of two wooden spoons, place doughnuts and holes in hot oil. Do not crowd; you may have to do a few batches. Cook about two minutes, turn over using sticks and cook for another two minutes (use a spoon to turn over the holes). Remove and place on a plate lined with paper towels for a couple minutes, then roll in the cinnamon sugar mixture. Serve warm.
Notes: I found the instructions for frying the doughnuts on Serious Eats, where they also have several recipes for glazes. You can try those as well...I made the chocolate glaze but thought it should be sweeter, so I would recommend altering the proportions of the sugar and cocoa. I think I'll try the strawberry glaze next time.
