Crunchy Bisquick Cobbler from StefCakes

Lauren's note: This recipe calls for using fresh peaches, but I make it year round with various types of frozen fruit. One bag of frozen strawberries is my favorite!

Cobbler:
  • 1 c. Bisquick
  • 3/4 c. Milk
  • 1/2 c. + 1/4 c. White Granulated Sugar*
  • 1 tsp. Vanilla
  • 3 tbs. Butter (salted)
  • 3 cups of FRESH fruit. (Or 3 peaches)
*Lauren's note: I usually skip the + 1/4 cup of sugar, as it's used to coat the fruit before adding to the cobbler. This recipe is plenty sweet without it!

Preheat oven to 375. In 8×8 pan, melt 3 tbs of butter in the oven while it preheats. Mix Bisquick, 1/2 cup sugar, vanilla and milk. Lightly coat fruit in 1/4 cup of sugar (Lauren's note: Skip this step unless your fruit is especially sour). Once the butter has melted, remove and pour batter directly over top and add fruit. Allow to rest while making the topping.

Crunchy Topping:

3 tbs. Melted Butter
2 c. Bisquick
1 c. Brown Sugar

Lauren's note: I half this portion of the recipe. 1 1/2 cups of topping is plenty for the size of this cobbler. I suggest using 1 1/2 tb melted butter, 1 c Bisquick and 1/2 c brown sugar.

Melt the butter and combine with the brown sugar. Slowly add the 2 cups of Bisquick until a crumbly mixture has formed. Cover the fruit with the topping and bake for 35-40 minutes.
