Apple Crisp
Peel, core and slice into a buttered baking pan:
Enough tart apples—I prefer Macintosh when they are in season, or Granny Smith any
other time-- to fill the pan half to three-quarters full (they will bake down). Sprinkle apple
slices with juice of one lemon. If they are really tart, sprinkle with a cinnamon-sugar mix.
You can also put a couple pats of butter on top of the apples before you add the topping.
Mix with a pastry blender or knife:
1 cup all-purpose flour
1 cup brown sugar
1/2 cup butter
1 teaspoon cinnamon
If this topping is too heavy for your taste, you can halve everything to make a lighter
topping. Spread these ingredients evenly over the apples. They may crumble, but that is
unimportant. Bake in a 375 degree oven for about 30 minutes. Enjoy hot or cold, with ice
cream or not.
